Chips and Crackers
Travel/Party Mix

 4 cups Chex-like cereal
 6 cups Cheerio-like cereal 
4 cups corn puffs-like cereal 
2 cups nuts, optional 
Seasoning Mix- 4 Tbsp coconut oil, melted
                                2 Tbsp lemon juice                                   ½ cup no-brag mock aminos OR 3 Tbsp Yeast Paste   
Sprinkle with 1 Tbsp onion powder.

Stir cereal in with seasonings and bake at 300°F until lightly browned. 
(Note: a combination of any whole grain cereal\nut combination totaling about 16 cups should work. Occasionally, we have used homemade bread croutons or mini breadsticks, etc. as a replacement in this recipe.) 

                                                                        No Brag-Mock Aminos
 (This is a concentrated seasoning, not a food by itself, and may be used in recipes to replace Bragg’s Liquid Aminos, etc.) ½ medium onion, chopped and caramelized in an oiled skillet
 ¾ cup water      1 tsp carob powder       ¼ cup salt      ½ tsp celery seed      2 Tbsp sucanat     
  2 ¼ Tbsp lemon juice      1 ¼ Tbsp Roma or Pero       1 Tbsp onion powder
 2 Tbsp sunflower seeds (the inside, not the shell) 
Blend until smooth. Keep in a container in freezer. Due to the salt content, it will not freeze solid, and may be scooped out as needed.

Not a Ritz Cracker

2 cups flour, spelt OR ww and unbleached

½ tsp salt 

¼ tsp lecithin

1/3 cup olive oil

 ½ cup rich soy or nutmilk

1 pkg. yeast

Dissolve yeast in milk. Mix all ingredients together. Roll 1/8inch thick on back of greased cookie sheet. Prick and mark in squares. Sprinkle with salt. Bake at 250ºF for 1 hour or until hardened.

Sesame Cheese Crackers
1 cup sesame cheese 
½ Tbsp yeast, optional
1 ½ cups of flour, mixture of oat, millet and unbleached or "white wheat" DO NOT USE ALL WHOLE WHEAT FLOUR AS THIS WILL MASK THE CHEESE FLAVOR

For using yeast, warm cheese. Mix ingredients. Add more flour if necessary to be able to knead dough. Roll out onto 1 cookie sheet. Score into crackers. Poke a hole in the centers. Sprinkle with salt. Bake 8-10 minutes until light brown at 325ºF. You may have to remove some of the crackers from the pan before others to avoid burning. I make “goldfish” for the kids from this recipe.
Sesame Crackers
¼ cup sucanat   
1/3 cup olive oil
2 cups quick oats 
2/3 cup water
½ cup sesame seeds 
2 tsp salt
1 cup cashews, ground OR ½ c almond meal & ½ c walnut meal
¾ to 1 cup whole wheat flour
Mix all ingredients thoroughly to make a stiff dough. Knead into a smooth ball. Roll out ¼ inch thick onto a large cookie sheet. Cut into fairly large cracker sized portions. Bake 20-25 minutes at 350ºF until golden brown. If browning too fast, lower the temperature and increase the time. Should be crisp like crackers. Makes a little more than four dozen 1”x3”sticks.
Nacho Chips
(A Replacement Picnic Food for the Young and Young at Heart)

1⁄4 tsp Pero (caffeine-free coffee substitute)
1 1⁄2 Tbsp tomato powder
1 Tbsp nutritional yeast
1 Tbsp organic powdered sugar
1 Tbsp onion powder
spray olive oil
1⁄2 Tbsp paprika
1⁄2 Tbsp salt

Fill one regular sized cookie sheet with Non-GMO corn chips to level with sides. Bake at 260ºF until warmed. Mix seasonings in a large bowl. Remove chips from oven and spritz with olive oil. Mix chips in bowl until they are coated with seasonings. Re-spray with oil if necessary to get the seasonings to stick to the chips. For an even healthier variation, you may choose to use popcorn or make your own chips by baking tortillas. Enjoy!
